The Mai Chau valley is three hours from Hanoi and looks nothing like it. The road over Thung Khe Pass is the moment it becomes obvious why people come: the valley opens below you in a sweep of rice fields, stilt houses, and green hills with no visible edge.
Day one is mostly in the saddle, cycling the flat lanes between the Thai villages while farmers work the fields and women weave at their looms. The evening is in a communal stilt house with the host family and a Thai traditional dance show followed by can wine. Day two goes further: a morning walk into Na Meo and Na Mo, two villages far enough from the main valley that they are rarely on any itinerary.
Pick-up from your hotel in Hanoi Old Quarter between 07:00 and 07:45. A short rest stop on the way, arriving in the mountains by mid-morning. The road crests at Thung Khe Pass for a scenic photo stop above the valley before descending into Mai Chau. On arrival: welcome drinks and a traditional lunch prepared by a local Thai family (vegetarian available).
The afternoon is by bicycle with your guide through the surrounding villages: farmers working in the paddy fields, women weaving the coloured scarves the Thai are known for, and the lanes between the stilt houses where village life carries on at its own pace. Free time from 16:30 to shop the weavers' stalls, walk further, or rest before dinner.
Dinner in the stilt house, followed by the Thai traditional dance show performed by community dancers. The evening ends with ruou can (can wine), the traditional fermented rice wine drunk communally through long bamboo straws from a clay jar. Overnight in the communal stilt house with the host family.
Banh Mi moment: The stilt house after the dance ends and the jar comes out. The musicians still nearby, the valley completely dark outside, the bamboo straws passed around the table one by one.
